Gluten Free TreatsVegan Burger PattiesAnti-Inflammatory Smoothie

Gluten Free Muffins

  • Purely Elizabeth grain free pancake and waffle mix
  • One medium sized very ripe banana
  • Half a cup of oil (equal parts avocado oil and melted coconut oil)
  • 3 eggs
  • Half a cup of dairy free milk
  • 1/2 tsp of cinnamon
  • 1 tsp of organic coco aminos
  • 6 chopped dates
  • Heat oven to 300 degress and bake for 25 minutes
  • 1 tsp of lemon zest (optional)
  • Optional delicious toppings: almond butter, peanut butter, and a dash of cinnamon

Chickpea Patties

  • One can of chickpeas (rinsed with strainer until bubbles dissipate, this will help reduce gas)
  • One can of organic mushrooms
  • 3/4 cup of cassava flour
  • 1/2 tsp of salt
  • 1 tbsp of minced garlic
  • 1 tbsp chia seeds
  • 1 small sweet potato (skin removed)
  • 1/2 tsp baking powder
  • 1/2 tsp onion powder
  • 1/2 tsp dried rosemary
  • 3 tbsp olive oil
  • 1/2 tsp lemon juice
  • 6 ounces of hot water (add as the last ingredient)
  • Mash ingredients together by hand. Form into patties, add a little olive oil to pan ad cook evenly on each side. About five minutes each.

Anti-inflammatory smoothie

  • 1 c oat milk (I prefer Elmhurst or Malk)
  • 3 pitted dates
  • 1 tbsp hemp seeds
  • 1 tbsp chia seeds
  • 1/8 tsp cinnamon
  • 3 tbsps (15g) coconut flakes (Bob's Red Mill unsweetened coconut flakes)
  • 4 oz (medium) pear (frozen pieces)
  • 3 oz avocado
  • Blend ingredients together and Enjoy!
